Cheesy Broccoli Chips

As a salt fiend, I find my self craving something crunchy and salty, but without the carbs. We are also a cheese loving household.  Sadly, after dropping the dehydrator off the bench they have been off the menu and forgotten for a while. Now I am back dehydrating thanks to a borrowed Excaliber Dehydrator (aren’t sisters the best!?).

The secret ingredient is Nutritional Yeast. It’s a cheesy flake that packs a punch in B12, which I need desperately from many sources as my nutritional DNA studies show I have high potential for poor B12 levels. It’s amazing what you can do with your diet and lifestyle when you know your DNA functionality. 

Nutritional yeast is dairy free...you would never believe it when you taste it. It’s a rich cheesy flavour and perfect for making dairy free cheese sauces. If you have a non meat eater in the house and want to boost up their amino acids, this is your go to product as there are 18 amino acids in nutritional yeast. 

So here is my naked chef recipe!

Cheesy Broccoli Chips:

5 Broccoli heads cut into medium size florets

1tsp sea salt

3T of oil of your choice  

1/2 a cup of nutritional yeast

1 1/2 cups of raw cashews

1t pepper

* 1tsp of chilli flakes - optional

Steps:

  1. Pour the oil over the broccoli florets and mix well in a large bowl.

  2. Blitz the salt, pepper, nutritional yeast, cashews and chilli flakes until it looks like grated parmesan cheese.

  3. Pour the nut mix over the broccoli florets in the large bowl and mix well.

  4. Spread mixture over dehydrator trays and dehydrate for 12-14 hours.
