Zingy Salmon Zoodles
Fresh, crunchy, creamy with a lemony zing is my ultimate meal. Possibly a meal I would choose if I could only have 1 meal choice for the rest of my life! It’s low carb, high good fats and delicious.
It’s a ‘raid the fridge and what can I have’ meal.
I always have a can of Salmon in the pantry, olive oil, dijon mustard, apple cider vinegar and zucchini in the fridge, so the rest is purely what’s available to add to the base recipe.
1/2 zucchini zoodled (Kmart has doodle machines for $20)
1 small can red salmon drained and crushed
1/2 avocado diced
1 teaspoon Pine nuts
1 Tablespoon olive oil
1 tablespoon apple cider vinegar
1 teaspoon of Dijon mustard
Method : Whisk the dressing ingredients in a bowl and mix through the above ingredients.
