Chilli Con Queso – Cheese Free

Ingredients

2 cup of raw unsalted organic cashews.

4-5 cloves of garlic

¼ of a cup of lemon juice

½ a teaspoon of rock salt

¼ of a teaspoon of Sweet paprika

¼ of a teaspoon of turmeric

2-3 tablespoons of Jalapenos

Method

  1. Soak Cashews in water for 3-4 hours and drain

  2. Blend salt and Garlic until blitzed. (TM1 Speed 7, 15-20sec)

  3. Add the drained nuts to the blender with ¼ of a cup of water and blend until smoothe or like smooth ricotta cheese consistency. (TM1 speed 7-9, 1-2min whilst stirring and pushing the sides down)

  4. Add the lemon juice and blend until smoothe consistency. (this is now basic raw cheese)

  5. Add Jalepenos, turmeric and paprika and blitz with slowly adding water until desired consistency.

  6. Keep in the fridge for 3-4 days.
