Does Cauliflower blow you away?

TELL ME WHAT YOU CAN NOT MAKE FROM CAULIFLOWER?

Cauliflower although a bit understated in its appearance and often over looked, it doesn’t get the attention it deserves!

They are a cruciferous vegetable, related to cabbage, kale, broccoli and Brussel sprouts which all originated from the one wild cabbage plant, which over time was selectively bred into different varieties that we have the pleasure of enjoying today.

Did you know the cauliflower as it names suggests is actually the flower buds of the plant that we eat and comes in four colours the traditional creamy white, plus orange, purple and green. Now if you see them go a bit yellow don’t worry, it is caused by the light and has no negative effects on the nutrient value, in fact the coloured ones might even be a bit healthier!

One single floret actually contains 10% of your daily needed vitamin C, which is so important for your immune system, eye health, glowing skin, and iron absorption. Interestingly they actually have more vitamin C than oranges!

It is also a good source of vitamins, C, K, B6, folate, manganese, magnesium, phosphorus and potassium. Cauliflower is quite high in fibre that feeds the healthy gut bacteria and helps reduce inflammation and aids in good digestive health, preventing constipation, diverticulitis and inflammatory bowel disease. For some people cauliflower might make you feel bloated and gassy, this is actually a good indicator that you need to work on your gut health, as there may be an imbalance of beneficial bacteria.

By steaming it you preserve more of the nutrients, unfortunately boiling it you will lose all those good health promoting nutrients.

A great way to get it into your diet is as “Cauliflower rice” a perfect rice replacement, which can be prepared ahead of time and frozen ready for your next meal, make the switch today trust me you won’t look back. Perfect if you are trying to lose or maintain weight as it has very little calories and you get the added bonus of adding all those essential nutrients to your diet too!
